What's A Pancake Without Maple Syrup?

It's dark, sweet and absolutely sensational on pancakes. What makes pancakes so delightful for breakfast? Maple syrup. You can always count on maple syrup to add the finishing touch to a stack of light, fluffy buttermilk pancakes. Maple syrup is heavenly on apple pancakes too. One of the most popular brands of maple syrup is Vermont Maple Syrup. Rich, dark amber and scented with that wonderful maple aroma, Vermont Maple Syrup, in its familiar bottle, is sure to be found on the breakfast table along with stacks of pancakes.

Where Maple Syrup Comes From

In the heart of the north woods in North America, sugar maple trees produce a sticky kind of sap. When the sap begins to run early in spring, small spigots are attached to these trees and the sap is then drained into barrels or small buckets. Then, they are taken to the processing centers where the sap is boiled to create a thicker consistency. Originally, native Americans used the sap as sugar. The sap from sugar maple trees was often used as a substitute for sugar. Farms that produce maple syrup are sometimes referred to as a "sugar bush". The world's largest maple syrup production comes from Quebec, Canada. The state of Vermont supplies most of the maple syrup to the US.

Maple Syrup, Not Just For Pancakes

Lovers of French Toast and Waffles nearly always reach for the maple syrup. If you want a true maple flavor with these breakfast dishes, add a few drops of maple syrup to the batter of pancakes and egg batter for French Toast. It will sweeten the batter slightly and the result will be pancakes with that wonderful maple flavor in each bite.

Other Uses For Maple Syrup

In addition to an excellent topping for pancakes, French toast and waffles, there are a number of other ways to use maple syrup. If you love sauteed liver and onions, but you don't like the bitterness of liver's flavor, try adding a tablespoon of maple syrup to the saute midpoint in the cooking stage. You'll be amazed at how maple syrup gives this dish a whole new taste. Make a blend of spicy brown mustard and maple syrup to add to baked beans. To create a fabulous barbecue sauce, blend a tablespoon of spicky brown mustard, 2 tablespoons of maple syrup with a dash of vinegar and canned tomato soup. Blend well and brush onto steaks, chops or burgers before grilling. Maple syrup can also be added to vinegar and walnut oil to create a different vinaigrette or salad dressing. Try this on salads of baby spinach, radicchio, celery and orange and pear slices.

The Breakfast Pancake Burger

Kids love fanciful foods. Make small pancakes into breakfast burgers by spreading a bit of maple syrup on the top of a pancake. Place breakfast sausage patties on top. Cover with the second pancake. This is a breakfast burger kids will love.

Maple Syrup Desserts

Maple Syrup enhances ice cream with a nutty flavor. It goes well as a topping for vanilla or chocolate ice cream. Substitute maple syrup for regular or brown sugar in recipes for pecan and Chess pies. To give custard a little zip, add maple syrup instead of sugar. Maple syrup can also be used as an icing for cookies, cupcakes and many types of cakes. Just blend it with a little melted butter and enough confectioners sugar to make a smooth consistency.

For vegetables like carrots, turnips or rutabaga, just add a spoon of maple syrup while cooking.

  • 1 1/4 cups milk
  • 1 egg

    In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.

Ingredients (2)

  • 1 cup all-purpose flour
  • 1 tablespoon white sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup milk
  • 1 egg
  • 2 tablespoons vegetable oil

Ingredients (3)

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 tablespoon baking powder
  • 1 1/4 teaspoons white sugar
  • 1 egg
  • 1 cup milk
  • 1/2 tablespoon butter, melted
  • 1/2 cup frozen blueberries, thawed

    In a large bowl, sift together flour, salt, baking powder and sugar. In a small bowl, beat together egg and milk. Stir milk and egg into flour mixture. Mix in the butter and fold in the blueberries. Set aside for 1 hour.

Ingredients (4)

  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg
  • 1 cup milk
  • 2 tablespoons vegetable oil
  • 1 tablespoon maple syrup

Ingredients (5)

  • 2 1/4 cups all-purpose flour
  • 3 tablespoons white sugar
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 1/4 teaspoons rapid rise yeast
  • 1 teaspoon vanilla extract
  • 1 1/2 cups warm milk
  • 1/4 cup butter, melted
  • 1 egg

    In a large bowl combine flour, white sugar, salt, cinnamon and yeast; mix well. Add vanilla, milk, butter, and egg until well blended. Cover and place in refrigerator overnight.
